The farm-to-table process allows local farmers to grow and harvest the Neohouzeaua species of bamboo at the optimal time for processing.

Bamboo is good for the earth?
Bamboo is naturally renewable tree-like grass. Requires little maintenance to farm as there is no need for pesticides or herbicides and very little water to grow. When harvested bamboo regrows from its own root system, there is no need to replant.
